Super Easy Apple Pancake
Serves: 4
  • 50 g of butter
  • 3 apples, peeled, cored and sliced
  • 3 tablespoons of brown sugar
  • ½ teaspoon of cinnamon
  • 3 large eggs
  • ½ cup of milk
  • 2 tablespoons of flour
  • ¼ teaspoon of baking powder
  • powdered sugar for dusting
  1. Preheat your oven at 190ºC / 375ºF. In a small bowl combine the brown sugar and the cinnamon.
  2. Take a large bowl and whisk together the eggs and the milk. In another bowl mix together the flour and the baking powder. Gently whisk the powdered mixture into the egg/milk mixture. This will form the batter for the pancake.
  3. In a skillet or an oven proof pan, melt the butter, then add the apple slices and 1 tablespoon of the brown sugar/cinnamon mixture and cook for about 4 to 5 minutes, until soft, stirring or tossing frequently.
  4. When the apples are nice and soft and just a bit caramelized pour the batter over them and sprinkle the remaining brown sugar on top.
  5. Transfer the skillet/pan into the oven and bake until it puffs up, about 20 minutes. Keep an eye on it though so it doesn't burn.
  6. After you get the pancake out of the oven dust it with powdered sugar and let it cool for 5 minutes, then serve.
